Garlic Lime & Cilantro Marinade

I have said it before, and I will say it again and again ... always marinate your chicken!  You will get so much more from a meal if you marinate.  The wonderful thing about this marinade is it works well with chicken, fish and veggies! 

Garlic Lime & Cilantro Marinade

Ingredients

2-3 limes, juiced
1/2 cup olive oil
1/3 cup chicken broth - click HERE for tips to save your broth before it goes bad
4-5 cloves of garlic, minced
4 tablespoons fresh cilantro, chopped 
1/4 teaspoon crushed red pepper flakes (more or less depending on how hot you like it)
2 tablespoons brown sugar

It really doesn't get much easier than this, all you do is mix all your ingredients in a bowl.  That simple!
I used this marinade for chicken, after I was done mixing the ingredients, I poured the marinade into a zip-top bag with the chicken breasts and put it in the refrigerator for about 5 hours.  The longer you let it soak, the more intense the flavors will be.  I suggest you allow it to marinade for at least 1 hour and no longer then 8 hours.  
Now it is time to fire up the grill and start cooking! 
 
In the first few minutes of cooking, you can brush on a little more of the marinade mixture.  After that, if you’ve used it for chicken, fish or shrimp, throw away the leftover marinade because germs spread and you don’t want them to spread on you!  If you’re grilling vegetables it’ll be fine.
