The Best Chicken Salad ... Ever! Added Bonus: Homemade Broth for later!

Usually when I think of Chicken Salad I think tons of mayo and get turned off.

I love Chicken Salad but rarely buy it anywhere for the reason that I just think it is made wrong.  In my opinion, this is the right way to make it!!
The Best Chicken Salad

Ingredients for Chicken Salad

1-2 cooked chicken breasts, chopped (see recipe below)
1 medium carrot, small diced
1/4 red onion, small diced
1 stalk of celery, small diced
1/8 cup golden raisins
1-2 teaspoons orange zest
olive oil mayo OR vegenaise
salt, to taste
pepper, to taste
Ingredients for Poached Chicken

1-2 large boneless-skinless chicken breast
Water
1 large carrot, cut in half
1/4 yellow onion
1 stalk celery, cut in half 
1 teaspoon oregano 
salt, to taste
pepper, to taste
Directions

Start by placing chicken in a medium to large pot, depending on how many breasts you are using, fill it with just enough water to cover the chicken. Add the carrot, onion and celery and bring to a rapid boil.  One you have reached a boil, turn down to a light simmer and cover.  Cook for 10-15 minutes or until chicken is fully cooked.

Remove chicken & save the liquid, set aside and allow the liquid to cool (keep the veggies in the pot while cooling). 

Place the chicken on a cutting board and chop it up the the consistency you like your chicken salad. 
Place the chopped chicken pieces into a bowl and set aside to cool. 

Cut the carrot, red onion and celery into small pieces. Add them to the chicken.

Next, add the golden raisins and mayo as well as salt and pepper to taste.

Mix well and serve the way you like. 
Serving Suggestions: atop a bed of cabbage, atop a bed of lettuce, as a sandwich, in a wrap or simply by itself!

By now the liquid has cooled.  Take a strainer and strain it into a container with a lid.  Just like that you have homemade chicken stock!  

If you do not plan on using it anytime soon, try my Quick Tip by pour the broth into an ice cube try and freeze.  Each cube equals 2 tablespoons of broth!
