Garlic Sweet Potato Mash

Ah, another sweet potato recipe! I told you guys, I just LOVE sweet potatoes! Not only do I love their flavor, but the health benefits are such a huge added bonus.
 
So who doesn't like mashed potatoes?  Exactly ... nobody!  Why not substitute regular potatoes for sweet potatoes? This is a definite taste bud pleaser and very easy to make.    
 
Garlic Sweet Potato Mash 
 
Ingredients

4 large sweet potatoes, peeled and cubed
3 tablespoons unsalted butter
3 cloves garlic, minced
pepper, to taste
salt, to taste 
Directions

Peel and cut the sweet potatoes into small cubes, the smaller the cubes, the quicker they will soften. 
 
Next, in a large pan boil sweet potatoes until tender, drain. 
 

Meanwhile in the same pan add butter and saute garlic until lightly browned.

Return potatoes to pan and mash until smooth and creamy.

Add pepper and salt (if you want) and serve hot.
 
Wasn't that easy? Now you have a fun twist to mashed potatoes!
