7-Herb Roasted Potatoes

7-Herb Roasted Potatoes, sounds like a lot I know. Well, the more the merrier, right? right!  I can guarantee you have all of the ingredients in your spice cabinet right now, if you don't, just improvise!

This potato side dish will pair well with just about anything! Chicken, steak, fish or even alone.

7-Herb Roasted Potatoes

4 large red potatoes, peeled and cubed 
1/8 cup olive oil
1 tablespoon minced garlic
1/2 teaspoon dried basil
1/2 teaspoon dried dill weed
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
Preheat oven to 475 degrees.
Wash your potatoes and cut them into small cubes, I leave the skin on. 
Place them in a large bowl and set aside. 
Combine garlic, basil, dill weed, thyme, oregano, parsley, red pepper flakes, black pepper and salt. 
Stir the olive oil and herbs into the potatoes until evenly coated. 
Place potatoes in a single layer on a roasting pan or baking sheet. 
Tip: do not line the pan with foil, the potatoes will stick and rip when you try to take the potatoes off the pan.
Roast for 20 to 30 minutes in the oven, turning half-way through to brown on all sides.
Serve hot. Enjoy!
