Spinach, Feta and Tomato Soufflé

Yesterday morning I was in the mood for brunch so I raided the refrigerator and decided to make a yummy Spinach, Feta and Tomato Soufflé.

This is a really fun way to prepare eggs and also very easy. 

Spinach, Feta and Tomato Soufflé

Ingredients

Spinach, fresh or frozen
Tomato, diced
Feta Cheese
Eggs (2 per ramekin)
Salt & Pepper, to taste
Cooking Spray

Directions

Preheat oven to 375. Spray ramekins with non-stick cooking spray.

Dice up the tomato into small pieces.  Rinse and drain the spinach well. 

In a small tupperware container with a lid, add the veggies, cheese, salt, pepper and eggs. 

Put the lid on and shake until all ingredients are mixed well. 

Pour the mixture into the ramekins, place on a baking sheet and bake for 15-18 minutes.  

Serving Suggestions: serve with a side of home-fries and turkey sausage links.
