Watermelon, Cucumber and Mint Cocktail

One of my favorite parts of summer are the pool parties! 

Just in time for today's Sunday-Funday festivities, here is a super light and refreshing poolside cocktail recipe that I got from a friend of mine (thanks Tosh).
It is very easy to make and tastes amazing.  
SIDE NOTE: Unfortunately, the photos aren't the best quality, I wasn't in my own kitchen and realized after the fact that I had my camera on the wrong setting .... oops - sorry!   

Watermelon, Cucumber and Mint Cocktail


Seedless watermelon, chopped
Cucumber, chopped peeled & seeded
Fresh Mint
Bacardi Limon (to taste)

Chop up the watermelon into medium sized chunks. 
Scrape the seeds out of the cucumber and chop into medium to small pieces. 
TIP: easiest way to seed a cucumber is to use a spoon and scrape them out. 

Fill blender with watermelon about 3/4 of the way full, add 1 medium cucumber (seeded and chopped) then add some rum. Blend until smooth.
Lastly, add 1 handful of mint (stems removed) and quickly blend them into the mixture.  By adding them after the first blending step, you prevent the mint leaves from getting over bruised.
Pour into glasses of ice and garnish with fresh mint.  
NOTE: Because watermelon is 92% water by weight and cucumber is 95% water by weight I have found that is is best to serve this drink over ice rather than adding ice to the blender which will cause it to be very watered down. 
SUBSTITUTIONS: If you do not drink, you can substitute the rum with lemon-lime soda, limeade or lemonade.  You could add lime as a garnish should you wish.
