Sesame Ginger Bok Choy

Over the weekend I try to clean of my refrigerator by using up any veggies before they go bad.  I had some bok choy left over from the Chicken, Broccoli & Mushroom Soba Bowl recipe from earlier last week so I quickly made a batch of  Sesame Ginger Bok Choy.

This dish is very light and is perfect alone of as a side dish, which ever you prefer. 

Here are the quick and easy steps.

Sesame Ginger Bok Choy 

4-6 bok choy leaves cut into bite size pieces
1/8 cup scallions, thinly sliced - click HERE for tips on how to get the most from your scallions
1/2 tablespoon low-sodium soy sauce  
1/2 tablespoon rice vinegar 
1/4 teaspoon vegetable oil
1/2 tablespoon sesame seeds 
1/4 teaspoon fresh grated ginger - Click HERE for ginger storage tips

Mix all ingredients except bok choy in a small bowl. 
Toss bok choy into the mixture, coating the leaves well. 
Over Medium-High heat, cook bok choy for approximately 6 minutes.
Serve hot.
