Baked Egg & Avocado

I saw this creative breakfast idea on Pinterest a while back and really wanted to try it.  Not only do I love avocados, but I also love eggs for breakfast!

This had to have been one of the easiest breakfasts to toss together and it turned out pretty good also!!! 

Baked Egg & Avocado


1 ripe avocado
1 egg
1 tablespoon diced tomato
cayenne pepper (optional)

Preheat oven to 400.

Start by slicing the avocado in half and removing the pit.   Using a spoon, dig the ditch a little bit wider in the avocado so that the egg fits.
Next, dice the tomato. 

Place the avocado halves in a glass baking dish.  Next, crack the egg into the center of the avocado half, place tomato on the egg and season with salt and pepper. 

Bake in the oven for 12-15 minutes, or until the egg is done to your liking. 

Sprinkle with cayenne pepper for a great flavor boost!  One more reason to eat a healthy breakfast in the morning!
