Grilled Chicken Caprese with Balsamic Reduction


Once upon a time I fell in love … with basil!

In my opinion, there is nothing more satisfying than taking a bite of food and tasting fresh basil.  It makes dishes feel fresh and so much more alive in your mouth.  Not only does basil dance oh-so-wonderfully on your taste buds, it is also packed with a long list of health benefits.

As I have mentioned before, we really love to grill in our home.  Therefore, I will give credit where credit is due … Thank you Lucas (my Fiancé) for being the ultimate Grill Master in our home! Now, back to the recipe ...

Here is a wonderful dish that is not only light and flavorful but filling and good for you!   


 Grilled Chicken Caprese with Balsamic Reduction

Ingredients

4 grilled boneless, skinless chicken breasts
1/4 cup balsamic glaze  
4 slices fresh mozzarella cheese, cut into approximately 1/4-inch slices
4 slices tomato, cut into approximately 1/4-inch slices
4 large basil leaves
Olive Oil
Salt
Pepper

Instructions

Heat grill to Medium/High heat.  Season chicken with salt and pepper to taste.  Lightly drizzle chicken breasts with olive oil to prevent from sticking to your grill.  Place chicken on grill and cook for 4 minute on one side then flip.  

Once you have flipped the chicken, coat the cooked side with the balsamic glaze and repeat on the other side after approximately 4 minutes flipping and repeating the process until the chicken it thoroughly cooked and no longer pink in the middle.   

Top chicken with mozzarella cheese and allow to slightly melt, about 1-2 minutes.  Remove from grill then top with basil leaf, and then tomato slice.

  1. We made this last night, and it was amazing!!! This was the first time I've ever had orzo, and the recipe was delicious!! The toppings for the chicken go so well together. We're definitely making this again!! :)
