Baked Bacon Egg and Cheese with Spinach

I just absolutely love starting my day with a great breakfast.

This morning I made the most delicious Baked Bacon Egg and Cheese with Spinach.  It was very easy to put together and oh so yummy!  I guarantee anyone that tries this recipe will be hooked!


Baked Bacon Egg and Cheese with Spinach

Ingredients 
SERVES 2
 
4 eggs
4 slices bacon, cooked - click here for an easy freezing tip
1/4 cup Gruyère cheese, grated
1/4 cup spinach, cooked
scallions - click here for storage tips
salt 
pepper
rosemary
olive oil  

vegetarian modifiable, see below*
 

Instructions 

Heat oven to 350 degrees. Butter or lightly oil 2 ramekins and set aside.

Cook the bacon slices.  *I just pop them in the microwave on a plate lined with paper towel. Cook about 4 minutes, making sure to check it after a few minutes and add time if needed. Once cooked, break into small pieces.  Next grate cheese, if needed.

Melt 1 teaspoon olive oil in a large frying pan over medium heat. Add spinach and cook until spinach is well wilted, about 2 minutes.


Crack 2 eggs into each ramekin, divide half of bacon and spinach evenly among ramekins over each egg.


It should look something like this


Top with cheese and season with salt, pepper and rosemary. 

 
Put ramekins on a baking sheet and bake, until whites are just set but yolks are still runny, about 15 to 18 minutes.

Remove from oven and top with scallions. Enjoy!

*This dish is vegetarian modifiable.

Egg can be replaced with mashed tofu combined with a little turmeric or with a mix (such as Tofu Scramber by Fantastic Foods brands) is a nice alternative to scrambled eggs.

Bacon can be replaced by soy or tempeh-based bacon strips (e.g. Lightlife Smart Bacon)
