Apple Cabbage Salad with Cottage Cheese

Elaine: Can I have a big salad?
Waitress: A big salad?
Elaine: You see, it’s a salad, only bigger, with lots of stuff in it.
I am also “that girl” - I love big salads with lots of stuff in it.  I got the idea for this salad from a local restaurant, I just loved it but decided $8.95 was a bit too much to spend every time I was craving it, so …. I made my own version of it. 

 

Apple Cabbage Salad with Cottage Cheese


Ingredients
green cabbage
red apple, washed, cored & chopped
carrots
walnuts - click here for storage tips
golden raisins
low fat cottage cheese 
mixed greens
*If you want to mix things up try using red cabbage and green apples - (this is how the restaurant does it)


Chop up the cabbage, lettuce of choice, apple and carrots.  Make a bed of lettuce and greens in a bowl or on a plate (there is no wrong way to do this); top with cottage cheese, apples, carrot, nuts and raisins. (as you can see I left out the carrot this time)


Personally, I feel this salad does not need dressing so I do not use any.  However, if you want to add some, I suggest using a vinaigrette dressing.

Now you have yourself a healthy, restaurant quality salad for around $2.50!

UPDATE ...

Here is a photo of an alternative version of the salad, only thing different is, I used a green apple and red cabbage.
